    Summer grilling is a tradition for many, and a few basic techniques can make the process easier and more enjoyable. The key is understanding heat, timing, and preparation.

    One of the most important steps happens before the food hits the grill. For chicken, beef, or pork, take the meat out of the refrigerator about 30 minutes before cooking. Adding cold meat to a hot grill can cause the outside to burn before the inside is fully cooked. Letting it come closer to room temperature allows for more even cooking and a better texture.

    After the meat is cooked, do not rush to slice it. Let it rest on a plate, tented with foil, for 5 to 10 minutes. This allows the juices to redistribute throughout the meat, making it juicier and more flavorful.

    While the meat rests, prepare the grill. Preheat it with the lid closed for at least 15 minutes. A hot grate helps create a good sear and prevents food from sticking. Once it is hot, use a grill brush to clean off any leftover bits from the last cookout. Starting with clean grates leads to better flavor and more even cooking.

    Understanding the two types of heat is also important. Direct heat means the food is placed directly over the flame. This is best for foods that cook quickly, such as steaks, burgers, chicken breasts, shrimp, and vegetables. Indirect heat, or radiant heat, is for larger cuts of meat, bone-in pieces, or anything that needs a longer cook time, like a whole chicken or ribs. If food is cooking too quickly on the outside or if flare-ups occur, move it to a cooler part of the grill.

    The way vegetables are cut matters for grilling. Pieces should be large enough so they do not fall through the grates. Cut everything into similar sizes so it cooks at the same pace. Asparagus and green beans can be left whole. Zucchini and eggplant are good cut into long spears. Tomatoes and bell peppers can be halved and placed cut-side down. A drizzle of olive oil and a sprinkle of salt is often all that is needed.

    Keeping the grill lid closed as much as possible helps trap heat and smoke. This encourages more even cooking and gives food a smoky flavor. Another common mistake is flipping food too often. Let the food stay in one spot to develop caramelization. As a general rule, flip once when the food naturally releases from the grates. If it is sticking, it needs another minute.

    The grill can be used for more than just meat and vegetables. Grilled fruit is a popular summer dessert. The heat brings out the natural sweetness of stone fruit like peaches. Pound cake can be grilled, and foil-wrapped s’mores are another option. Grilling can also be a way to extend the evening and enjoy time with family and friends.
